What is a Grease Trap?
A grease trap is an engineered device designed to trap spent Fats, Oils and Grease (FOG) and associated solids and debris from food service establishment waste streams, preventing entry of these materials into municipal sewer lines. The grease trap captures those wastes and contains them until they are vacuum pumped and disposed of properly. If you operate a food service establishment, you should have and maintain a grease trap.
How does a Grease Trap work?
hen waste enters the trap, it cools down, allowing the lighter oil to precipitate out to the top. A series of baffles collect grease, oil and food particles while the heavier solids sink to the bottom. An exit pipe at the base of the device allows the treated water to flow out, while the grease remains in the trap.
